Ingredients:

  • 1 1/2 cups whole wheat flour

  • 13 cup bourbon
  • 1 orange zest
  • 2 tsp. ground linseeds
  • 12 cups self-raising wholemeal flour
  • 12 cups self-rising white flour
  • 12 teaspoons ground cinnamon
  • 14 teaspoons nutmeg 14 teaspoons ginger
  • 16 optional pecans or other nuts for decoration

For Soaking

  • 3/4 cup orange juice
  • 1 teaspoon of lemon juice
  • 1 cup dried fruits
  • 1/2 cup nuts
  • Frutti 1/2 cup

Instructions

Soak fruit for at least 2 hours, preferably overnight, in juice, brandy, orange zest, and linseeds.

Preheat the oven to 150°F

Sift together the two flours, as well as the cinnamon, nutmeg, and ground ginger.

Stir the flour mixture into the soaking fruit.

Bake for 30 minutes in 6-inch pans or 40-45 minutes in 8-inch tins.

Preparation Method

  • Pour the oil into a large mixing basin. Whisk in the Jaggery powder for 2-3 minutes. Mix in some yogurt until the jaggery powder is dissolved and you have a lump-free, uniform mixture. Mix in the vanilla extract.
  • Add dry ingredients and fold using a spatula.
  • Add the chopped nuts and mix well.
  • Fold in half of the soaking dried fruits into the batter with a spatula.
  • Fill 2 greased 7-inch aluminum foil with batter to 3/4 full.
  • Level the batter with a spatula and top with the saved wet and dry fruits.
  • Tap the aluminum foil gently and place it in a preheated oven or pressure cooker. I cooked one in the pressure cooker and the other in the microwave on a convection setting for 30-35 minutes at 160 degrees Celsius.
  • Using a toothpick, check for doneness. If the toothpick inserted comes out clean, the cake is done.
  • Allow the loaf to cool fully on a wire rack before wrapping it in cling film if preparing it as an edible gift. After that, just wrap the loaf with a satin ribbon.
  • When the loaf has completely cooled, remove it from the mold and slice it.
  • Drizzle with powdered sugar or serve plain.
